Secret Italian Pasta Recipes

I have always loved pasta, it tastes great, it's in-expensive, and there are so many different ways to prepare it. The big question is what is the secret to making the best Italian Pasta Recipes at home?

First thing is the Pot, you want a large deep pot. Avoid anything shallow. Stainless steel post are my favourite.

Second thing is good quality filtered water, the colder the better. You may want to let the water run for a while. Use at lease 1 quart of water for every 100 grams of pasta.

Third is you have to buy good quality 100% durum semolina noodles. You don't necessarily have to buy authentic Italian pasta noodles, to make authentic Italian pasta recipes.

Forth is the cooking. You must add the salt as soon as the water comes to a rapid boil, then you may add the noodles.

When cooking the noodles follow the instructions on the package, and never add any oil to the water. When you drain the pasta make sure you don't rinse the noodles. The starch will help the sauce to stick to the noodles.

Now for the sauce, I personally like my noodles tossed with some freshly minced garlic and good quality olive oil, with some salt and pepper to taste.

But if you like tomato sauce, I suggest you use canned tomatoes because fresh tomatoes are only in season in the summer months.

Last but not least love. All Italians add a little love to everyone of the their pasta recipes.
